Easy Raw food avocado chocolate mousse // enkel chokladmousse avokado raw

If you want a dessert which is vegan, paleo  or just healthy for you, the avocado chocolate mousse is a good alternative. It will not taste like a "normal" chocolate mousse full of cream, but avocado and cocoa blends together better than expected. The result is a thick, heavy chocolate-alike texture that does not taste too sweet, you can feel the base of avocado a little bit but the cacao is dominant and you will just eat a little bit because it makes you full so quickly.

INGREDIENTS ( serves 2)

  • 1-2 soft avocados (1 if it's really big) // 1-2 mogna avokado
  • 1-3 tbsp honey or agave syrup // 1-3 msk honung eller agavesirap
  • 2-3 tbsp raw cocoa // 2-3 msk raw kakao ( normal cacao is ok but it will be nicer taste with raw cacao)
  • Choice of fruit or berry to serve to the mousse // frukt eller bär att servera till ( I used raspberry)
  • Dark shredded chocolate to sprinkle on top of the mousse // mörk riven choklad att sprinkla på moussen

HOW TO DO IT

  • Mix all ingredients in a bowl with a mixer. Start with the lower doses of cacao and honey/syrup
  • Taste to see how much honey/syrup and cacao you prefer, add more according to what you like more
  • Serve with your fruit or berry of choices

Easy tasty vegan plantain taco // Lättlagad kokbanan vegan tacos

This recipe of plantain (kokbanan) taco is super easy and quick to do! I have not invented this recipe my self but found it on this site. Thank you!

I served this at a vegan /paleo dinner that you can see here for more inspiration.

(It's the upper taco, with the sliced plantains on top)

The plantain can be found in bigger grocery stores in Sweden, not sure how it is in the rest of the world. It is the very big, greenish banana-looking fruits that are among the exotic fruit. Its not at all behaving or tasting like a normal banana so please make sure that you follow these steps

  • It needs to very ready, and not green at all. Preferable with a lot of spots on or even dark. If you have no choice but to take a yellow/green one with just a few spots you can put them in water  few hours and it will be easier to peel them
  • They are not easy to peel. They can also be a bit acid so if you have sensitive hands use gloves and a small knife to peel off the skin
  • Once you got the peel off you are good to go!
The taco dish consists of the plantains that will be fried, the black beans that will be boiled softly, and some extra ingredients to pimp your taco if you wish. It does not take more than 20 minutes too cook.

INGREDIENTS ( 2-4 people)

The Plantains // Kokbananerna
  • 2 large plantains, peeled and sliced // 2 stora kokbananer, skalade och skivade
  • 1 Tbsp coconut oil // 1  msk kokosolja
  • 2 Tbsp coconut sugar  // 2 msk kokossocker
  • 1 tsp ground cumin // 1 msk mald kummin
  • 1/2 tsp ground cinnamon // 1/2 tsk mald kanel
  • 1/4 tsp sea salt (plus more to taste) // 1/4 tsk havssalt
  • 1/8 tsp cayenne // 1/8 tsk mald cayenne peppar (jag hade inget så jag tog chilipulver)
The black beans // Svarta bönor
  • 425 g can black beans // 425 g svarta bönor
  • 1/2 tsp ground cumin // 1/2 tsk mald kummin
  • pinch cayenne (or chili powder) // en nypa cayennepeppar eller chilipuver
  • Salt
For serving// till servering
  • Taco shells or green salad leaf as wrap // Tacoskal eller salladsblad
  • 1 jalapeño, seeds removed and sliced // Jalapenjo skivad
  • Fresh cilantro, chopped // färsk koriander
  • 1/2 red onion, diced // 1/2 rödlök, finhackad
  • Hot sauce / salsa // valfri stark sås
  • Lime juice
HOW TO DO IT //INSTRUKTIONER

  • PLANTAINS: Mix all ingredients for the plantains with the sliced plantains carefully. Fry in the pan on medium heat 2-3 minutes on each side. They should fry but not to warm, since the coconut sugar easily get caramelized, and then they get a taste of burned. then the plantains are ready!
  • BEANS: Put the beans (without water) in a pan on low heat. add the spices. Once starting to softly boil, lower the heat and keep them warm until served. Ready!
  • Serve with your taco shell, add on and sauce of choice. Enjoy!

If you dont know what sauce to have, a guacamole is always an hit, use this and mix it all with a fork:
  • 2 avocados, mashed with a fork // 2 avokados mosade med en gaffel
  • 1 tomato, chopped // en finhackad tomat
  • half a pot of fresh cilantro // en halv kruka koriander, finhackad
  • Pinch of salt // En nypa salt
  • Chopped chili of choice // finhackad chili
  • 1/2 union, chopped // 1/2 gul lök finhackad3
  • Some lime juice // lite lime juice

The fried plantains

Plantain taco served in salad leaf, still missing union, jalapeno and sauce of choice :)

We had the guacamole but also these sauces, Valentina, Louisiana Hot sauce and Tabasco

Easy tasty vegan paleo dinner // Lättlagad god vegan och paleomiddag

What do you do when you are an I-eat-everything-and-too-often-I-eat-pasta-person and you will have your dear friends over for dinner and they wish a mix of vegan and paleo dinner? First you panic but then you realize that google will save you.The dinner consisted of tacos, which is a good alternative since you can pick what you would like to eat. And actually it was not too difficult, just to find the special coconut sugar and other specific ingredients took some time in the store but the actual cooking was ok :)

This was the full menu, including links to all recipes: (soon all links will be updated)
-Plantain (kokbanan) & black beans tacos as main main dish LINK
-Walnut & avocado pesto taco as main dish
-Guacamole LINK, cilantro sauce and nachos as extras
-Avocado chocolate mousse as dessert LINK
-Cabbage chips as snacks
-Sparkling wine & non alcoholic rose for drinks (below)

This was a great menu and all guest were satisfied, even me that usually don't eat all vegan, it was delicious!  But keep in mind, and we also discussed this at dinner, That don't expect a avocado chocolate mousse to taste exactly like a cream based chocolate mousse, becuase it is not the same.

I have experienced that many recipes and blogs etc post their home made veggie chips, raw food balls, and substitute chocolate desserts and you can read that it's delicious, always delicious. But it will never taste the same as you favourite main stream chocolate cake or candy. So be prepared for that but keep exploring and trying out different foods and healthier choices!

All dishes took up the full table!

Avocado chocolate mousse

My favourite budget sparkling wine (prosecco)  all times, La Robinia Prosecco. And the non alcohol N2, a mild rose', preferably served with a frozen berry in the glass.

The sauces that I served for this dinner to add some extra spice to it :)

Warm nachos with beans recipe // Nachos i ugn recept

Who wouldn't like warm, crunchy nachos with beans, cheese and a nice tomato mix? Especially in Europe there are many variants om "Mexican" food, not similar at all no real Mexican food. However, this is a super simple Mexican snack recipe, perfect for the movie nigh! And don't bee afraid of the beans, I was not a fan of beans but these warm nachos with bean mix is truly delicious!

Nacho ingredients 2 people:
  • Cooking oil
  • 1 bag of nachos, salted
  • 1 jar/box of red beans
  • 1 small or 1/2 big union
  • 1 cube of chicken bouillon
  • Some fine chopped chili (voluntary)
  • 4 dl shredded cheese
Tomato mix ingredients 2 people:
  • Pinch of salt
  • 1 tomato
  • 1 pot of fresh coriander
  • 1 small or 1/2 big union
This is how to do it:

Heat your oven to 170-200 C. Chop the union in small cubes, fry then in oil in a pot until they get soft. Ad the beans and let it heat. Add the chicken bouillon cube, dissolve it an let it boil softly a few minutes.

Take the pot of the heat and mix the beans in the pot with a mixer, not to much, because you want some chunky pieces of the beans to remain. Divide your bag of nachos into two plates that are oven proof. Put the bean mix on top of the nachos. It's a matter of taste how much bean mix you would like to put, but I would use all the bean mix on the two plates, while on the picture below we have just put some.

Add the shredded cheese on top of the nachos and put into the heated oven for a few minutes until the cheese has melted.

Meanwhile chop the union, tomato and coriander, add a pinch of salt and mix everything. Your tomato mix is now ready! Probably you nachos too, make sure they don't burn in the oven.

Carefully take out the hot plates, add the tomato mix on top and the nachos is ready to enjoy! These nachos are preferably eaten with you hands, perfect snack to the movies! It's really delicious :)

If you are not sure how to treat the hot plates while trying to eat your nachos, you can always put a similar cold plate, with a napkin on top, and then place you hot plate on top of that (the napkin prevents the heat to spread to your cold plate). Another solution is to do the nachos on a oven plate and then distribute the hot nachos to cold plates. However its a bit tricky to divide the nachos with melted cheese on top...

AZUL HISTORICO , PASTEL DEL TRES LECHES.

Well talking about our last trip to Mexico my Girlfriend and me we went to a very special restaurant in the city center ZOCALO called AZUL HISTORICO.

People recommended this place for eating  traditional Mexican food but in a new style!.
and yes we can say that the food and the service was great you can see in one of the corners ladies making tortillas by hand and well the service is incredible.

My Girlfriend asks date first night for a Bean tamal and then  some tacos of cochinita pibil.  they were really tasty and nice decorated also we drank some mezcal ( Mexican drink similar like tequila with some oranges and worms salt. interesting and spicy!

This place we can say that takes  of our top of restaurants a number 4 in our list why a four well the place has  a nice ambientation the service is nice the food also but is missing something to make it perfect, being critics since the beginning you need to make a reservation, the reservation comes with a clue of that specially day, so if you want to jump in you need to give the clue is interesting that Mexicans are using this type of european style,

when arrival the place as we said is nice is a garden with tall trees and candles all around hanging the old building has around lots of arts shops worth to see them but very expensive. at the same  building ! there is a hotel and a mescaleria, but focusing on the restaurant as we said  something is missing i don't know what Chef Zurita needs to change to give that blink to the restaurant to take it to another level!

LETS SEE IF THE NEXT TIME WE GO TO MEXICO WE CAN HAVE THAT BLINK! THAT IS MISSING IN THIS WONDERFUL PLACE!

curiously in that place we ate a Famous Pastel de tres leches ( cake of three milks ) and here we giVE the recipe for you ! i hope you enjoy it

INGREDIENTS
FOR THE CAKE:

Butter for coating the dish

  • 1 cup all-purpose flour
  • 6 large eggs
  • 1 cup granulated sugar
  • 1 (14-ounce) can sweetened condensed milk
  • 2/3 cup evaporated milk (not nonfat)
  • 1/2 cup unsweetened canned coconut milk
  • 1 tablespoon dark rum, such as Myers’s, plus more as needed
  • 1 cup sweetened flaked coconut
  • 1 1/2 cups heavy cream
  • 1 tablespoon powdered sugar

  1. Heat the oven to 325°F and arrange a rack in the middle. Coat a 13-by-9-inch glass baking dish with butter; set aside. Place the flour in a small bowl and whisk to aerate and break up any lumps; set aside.
  2. 2Separate the eggs, placing the yolks in the bowl of a stand mixer. Reserve the whites in a separate, very clean, medium bowl. Add the sugar to the yolks and, using the paddle attachment, beat on high speed until pale yellow, about 5 minutes. Transfer the mixture to a large bowl; set aside. Thoroughly clean and dry the stand mixer bowl. Place the egg whites in the clean bowl and, using the whisk attachment, whip on high speed until medium peaks form, about 1 1/2 minutes.
  3. 3Using a rubber spatula, stir about a third of the egg whites into the yolk mixture to lighten it. Then gently fold in the remaining whites. Sprinkle the flour over the egg mixture and gently fold it in, just until there are no more white flour streaks. (Do not overmix.)
  4. 4Pour the batter into the prepared baking dish and bake until the cake is puffed and golden and the edges pull away from the sides of the pan, about 20 to 25 minutes.
  5. 5Meanwhile, place the three milks and the rum in a large bowl and whisk until combined; set aside.
  6. 6Remove the cake from the oven and place on a wire cooling rack. Using a toothpick or wooden skewer, poke holes all over the cake and allow to cool for 15 minutes. Pour the milk mixture evenly over the cake and continue cooling, about 45 minutes more. Tightly cover with plastic wrap and refrigerate at least 4 hours or overnight.
  7. 7When the cake is ready to serve, spread the coconut in an even layer in a large frying pan. Toast over medium heat, stirring often, until lightly browned and fragrant, about 5 minutes. (If the coconut begins to burn, reduce the heat.) Immediately remove from the pan to a small bowl.
  8. 8Place the heavy cream and powdered sugar in large bowl and whisk until medium peaks form. (If you like, flavor it with a teaspoon of dark rum.) Slice the cake and serve topped with a mound of whipped cream and a sprinkle of toasted coconut.

Wonton dumplings minced meat recipe // Dumplings med färs recept

Super easy and tasty dumpling recipe using minced meat! The dumplings can be boiled for a soft finish or deep-fried in oil if you want them more crispy. To the dumplings we will do a soya dip sauce.

Ingredients
  • 400 g minced pork meat // fläskfärs (mixed or beef meat is also ok)
  • 2 shallots //shalottenlökar (we used red union which worked well)
  • 1 chili (any color)
  • 1 tbsp spoon fish sauce // msk fisksås
  • 1 tbsp + 2 tsp sesame oil // tesked  sesamolja
  • 2 cloves of garlic // vitlöksklyftor
  • 1 lemon // citron
  • 2 tbsp fresh coriander// msk färsk koriander
  • 2 package of wonton // pkt wontondeg
  • 4 tbsp sirup // sirap
  • 4 tbsp soya // soja
  • 2 tsp vinegar // ättika
  • 1-2 tbsp sesame seeds // sesamfröm
  • Oil (If you want to have fried dumplings)
How to do it

Put the water to boil if you want to boil the dumplings or prepare a pan of oil if you want to fry them.

Shop the shallots, garlic, coriander and chili fine. Shred the peel of the lemon. Mix the minced meat together with the shallots, garlic, chili, fish sauce, 2 tsp sesame oil  and lemon peel. Mix in well.

Now it's time to fill the dumplings. Take the wontons, one by one, wet the edges of the wonton with cold water using one finger (this will make them close easier). Fill them with about a tablespoon of the minced meat mix. You can fold the wonton and make a half moon shape or put the mix in the middle of the wonton and fold each corner up towards the middle. Pinch the edges together of the wonton where you want it to close.

Now make the dip sauce. Roast the sesame seeds in a pan. Mix sirup, soya, vinegar, 1 tbsp of sesame oil and the roasted sesame seeds. The dip is now ready!

Now we will cook the dumplings, either in boiling water or fry them in oil. If boiling them in water, don't cook them all at once. They will after a while pop up to the surface, let them boil for a couple of more minutes and then remove them, one by one as they are ready. Cook the rest of the dumplings when the first batch is ready.

If you choose to fry, fry them until they get golden brown and then remove them. We did fry ours, and below you can see the result!

Classic rhubarb pie recipe // klassisk rabarbersmulpaj // pay de rebarbara

The rhubarb is growing like crazy now during pre-summer and when its new and fresh it's more delicate! So I did a classic rhubarb pie, goes fast and tastes like summer :)

Ingredients:
  • 3-5 Rhubarb // rabarber // rebarbara
  • 1DL sugar // socker // azucar
  • 1 teaspoon vanilla sugar // vaniljsocker // azucar de vainilla
For the dough:
  • 2 DL flour // mjöl // harina
  • 1 DL oatmeal // havregryn // harina de avena
  • 4 teaspoons sugar // socker // azucar
  • 150 g butter // smör // mantequilla
How to do it:
Heat the oven to 200 C or 392 F

Peal the rhubarb and cut them is small pieces (about 1 cm). Cover your pie dish with butter so the rhubarbs wont get stuck. Put the pieces of rhubarbs in the pie dish. Spread the sugar mix over the rhubarb.

Now do the dough for the pie. Put flour, sugar and butter in a bowl and mix everything, preferably with your hands. Don't make a big ball of dough but make small pieces of crumbs with your fingers. Spread the dough over the rhubarb.

Bake the pie in the oven for about 20-30 min and serve with vanilla ice cream or vanilla sauce!

I got a little bit too big pie dish and too much rhubarb for the amount of dough, if you do this in a normal round pie dish the dough will cover better :)

Tapioca pudding recept // tapioca pudding recipe // receta de tapioca

Tapioca was one of my favorite afternoon treats/deserts when I was a kid growing up in Mexico. I really enjoy the soft milky taste of vanilla and tapioca. I made this for my Swedish girlfriend and she did not really get the taste since she never tried it before, but she thought that kids would probably like it more :)

So what is really Tapioca? It's a starch extracted from the Cassava root, and very popular in Asia and south America in cooking. The extract of tapioca is gluten free and only contains carbohydrates. I found a good explanation of Tapioca HERE.

If you never tried it before, give it a shot and see what you think!

Ingredients:
1 liter milk // mjölk // leche
3 eggs // ägg // huevos
3/4 cups or 1,5 DL sugar // socker // azucar
2 table spoon liquid vanilla extract // flytande vaniljextrakt // extracto de vanilla
4 tablespoon (big) tapioca

How to do it:
Heat the tapioca, sugar, vanilla extract and milk slowly and stir so the milk doesn't burn, stir until it starts to boil a little bit, then remove it from the heat. The tapioca pearls will never dissolve, they will just become a little bit bigger and softer during the process. Taste the mix do adjust the amount of vanilla extract. Of course you can change the vanilla to any other preferred extract.

Separate the egg whites from the egg yolks. Mix the egg yolks seperatly really well and mix some of the warm milk to really make sure that the egg yolks are dissolved. Put the mix back into the heated milk and stir.

Now put the pot outdoors a while to let it cool down, or if you can't do that just put it somewhere where it can get a bit cooler. When it's cooler put the tapioca milk in a big bowl. If the tapioca pearls got stuck in the bottom of the pot, just gently remove them from there and mix them before putting into you milk in the bowl.

Whip the egg whites really hard and fluffy. You will then put the egg whites into the tapioca milk. Either you just put all egg whites and try to stir a little bit so it can be wet from the milk. The egg whites will end up on top of the milk.

Or you take a spoon an put the egg whites piece by piece into the tapioca milk so it will become like egg white balls floating around.

Put the bowl in the fridge so it can get a bit thicker. Serve in smaller portion bowls as you wish.

Enjoy!

Slice the garlics in thin slices, heat the oil (not too warm!)  in the pan and put the garlics there for a while. Then add the spinach, stir around until the spinach is warm and then add the beans. Now you can add your pasta and mix everything.
Slice the garlic and prepare the ingredients you want to have in addition to the garlic

Heat the oil and add the garlics, stir

Add the spinach leafs, stir. When they get warm (as the picture shows) then add the beans. You can now add your pasta and mix everything carefully!

Serve with or without salmon! you can change this recipe and make it as you please, the garlics are a good foundation to make your favourite!
