Fantastiska Drömmar recept// Swedish Dream cookies recipe // Galletas de suenos

Cookies is Europe is traditionally small and delicate, and are served to afternoon tea or whenever there is a reason to have a coffee. In the last years these cookies are more served, especially in the Nordic countries whenever there is a birthday party.

These cookies are much smaller and more plain than the big American cookies where you add chocolate chips etc, but yet delicate and they will melt in your mouth.

Ingredients:
150 g butter (room temperature) // smör// mantequilla
4,5 DL or 2 cups sugar //socker // azucar
1,5 DL or 3/4 cups sun flower oil // solrosolja // aceite
1,5 tablespoon vanilla sugar // vaniljsocker // azucar de vanilla
1 tea spoon Baking Ammonia/Hartshorn* or 2 teaspoons Baking Powder // 1 tsk hjortronsalt eller 2 tsk bakpulver // 2 cucharadita levaduro de pulvo
5 DL or 2 1/4 cups  flour / mjöl / harina

*This is a type of salt that has the same effects as baking soda but the result will be even more delicate cookies. It's very unusual outside northern Europe, and can be replaced with the double amount of normal baking powder

How to do it:
There are a few tips and tricks to make your dream cookies as close as perfect as possible
  • Try to use the Baking Ammonia (Hjortronsalt) if possible
  • When you mix the butter and the sugar, do it preferrably by hand and do not use a kitchen helper, if you do it by hand the cookies have a greater chance of not becoming too flat
  • When you put the cookies in the oven, do not ever open the oven to take a peak, it will make the cookies to become too flat
  • They should not become gold brown, then they are burned. They should stay "white", so keep an eye on them through the window of the oven
Heat the oven to 150 C or 302 F

Mix the butter (not melted) and the sugar so it becomes a fluffy consistence. Then add the oil.

Seperatly, mix the dry ingredients of the vanilla sugar, baking ammonia/baking powder and flour. Add it to the butter and sugar mix.

Make small balls that you put on a baking plate covered with baking paper. Bake them in the oven in 15-20 minutes. Make sure they don't get any color, and don't peak by opening the oven!

These cookies are better served in simplicity to a cup of coffee or tea.
